I made sushi cake a while ago for my husband’s birthday dinner but I did not have chance to post it. My husband does not like any sweets, I made this with his favorite ingredients instead of birthday cake!!

Sushi cake is easy to make. Here is ingredients I used.

Bottom Layer: I mixed the following ingredients.

  • avocado mashed
  • lemon juice
  • crushed wasabi beans

Middle layer: I used Eel kabayaki pacakege from Japanese grocery store. You can see this eel package at freezer section in Asian grocery store.

Top layer:  Sushi rice (mix Japanese sticky rice with sushi vinegar. If you do not have sushi vinegar, you can mix apple cider vinegar with sugar or maple syrup, pinch salt)

For garnish:

  • Kinshi tamago (Shredded Egg Crepe) : If you do not know how to make shredded egg crepe, you can use scramble egg on the top. Here is the great recipe for Kinshi tamago .
  • smoked salmon
  • Japanese cucumber or Persian cucumber
  • kaiware daikon sprouts
