I cooked mexican inspired spring roll with Chicken Taco last night. Maybe I can bring one of the appetizer for Cinco de Mayo themed potluck party.
Spring rolls is similar to Chinese egg roll. I use summer roll skin with Mexican inspired ingredients and served with salsa and sour cream.

Chicken Taco spring roll
[Chicken Taco]
  • 1 lb ground Chicken
  • Taco mix
  • ⅛ onion minced
  • 2 mushroom minced
  • lettuce minced
  • red bell pepper minced
  • Chery tomato minced
  • Ciantro minced
  • cheese (sliced thinly)
  • Spring Roll wrapper
  • salsa
  • sour cream or cream cheese
  1. Preheat oven to 400
  2. Cook taco with all ingredients as package instructed.
  3. prepare all ingredients.
  4. On the spring roll wrapper, arrange all ingredients and roll them.
  5. Spray cooking spray on foil lined cookie sheet. spray or coat with oil using brush. Cook 15-20 minutes untill turn golden yellow.
