Coconut Curry Dinner Plate

I love Thai curry with coconut milk a lot and I always wanted to make this at home.
I made coconut curry last weekend with this recipe (Vegan Thai Curry) but made little more mild and kids friendly this time.

Coconut Curry Dinner plate

  • 1 Tablespoon coconut oil
  • 2 cloves garlic, minced
  • 1 Tablespoon ginger grated
  • 1 small onion, diced
  • 1 cup broccoli
  • 1 small carriot diced
  • ⅓ cup green beans
  • ½ to 1 cupcoconut milk
  • 3-4 mushroom or shiitake mushroom chopped
  • 1 Tablespoon curry powder
  • ½ teaspoon cumin
  • ¼ corriander (option)
  • 1 cup vegetable stock
  • 1 Tablespoon miso
  • 2 teaspoon maple syrup
  • pinch salt and pepper
  1. Heat a large saucepan to medium heat and add coconut oil. Add the onion, garlic, ginger, carrot, broccoli, mushroom and a pinch each salt and pepper and saute about 5 minutes.
  2. Add curry powder, corriander, cumin, vegetable stock, coconut milk, miso, maple syrupp and bring to a simmer. Lower heat and continue cooking about 15-20 minites all vegetable cooked.
  3. Adjust taste salt and pepper if need.
