Super Bowl Mini Meatloaf Cupcake

Are you ready for tonight?
I cooked Mini meatloaf cupcakes for Super Bowl tonight.

I posted Sunflower meatloaf cupcake before recipe earlier but here is the meatloaf recipe today..

 

Mini meatloaf cupcake for Super Bowl?

Ingredients
Meatloaf:
  • 1 lb ground pork
  • ¼ onion minced
  • 2 inch carrot minced
  • 2 mushroom minced
  • 1 egg
  • 1 teaspoon
  • ¾ cup gluten free panko or any bread crumbs
  • 2 cloves garlic grated
  • 1 Tablespoon white Miso
  • 1 Tablespoon Gochujang (option)
  • 1 Tablespoon olive oil

Instructions
  1. Preheat the oven to 375°. Line a muffin tin with foil liners.
  2. saute onion with olive oil until golden brown.
  3. In a large bowl, mix all meatloaf ingredients. Place meatloaf mixture into mini muffin tins filling them to the top.
  4. Bake Bake at 375° for 18-20 minutes or until cooked through. Remove from tins.
  5. Mix all frosting ingredients.
  6. Add kechup on the meat loaf and pipe frosting with star tip on the meatloaf cupcakes.
  7. Add decoration on the top

I also crunchy green beans with Apple miso dips instead of french fries.
