Sunflower Meatloaf Cupcake
  • 1 lb ground pork
  • 1 small onion minced
  • ½ carrot minced
  • 1 Tablespoon spinach puree
  • 1 egg
  • 1 teaspoon
  • ¾ cup gluten free panko or any bread crumbs
  • ½ cup seasoned breadcrumbs
  • ¼ cup ketchup
  • 1 egg
  • 1 tsp kosher salt
  • 1 large garlic clove grated
  • 1 Tablespoon white Miso
  • 1 Tablespoon Gochujang (option)
  • 1 Tablespoon olive oil

Mashed Potato frosting:
  • Your favorite mashed potato recipe (I added mashed cauliflower into mashed potato)
  • Tumeric
  • Curry powder
  • Spinach puree or basil pesto
  • Carrot
  • your favorite tomato sauce or ketchup
  1. Preheat the oven to 350°. Line a muffin tin with foil liners.
  2. In a large bowl, mix all meatloaf ingredients. Place meatloaf mixture into muffin tins filling them to the top.
  3. Bake Bake at 350° for 20 minutes or until cooked through. Remove from tins.
  4. For mashed potato, add curry powder and tumeric for yellow, and spinach puree for green color.

[for decorating sunflower]
  1. Prepare 2 diposable bags: set 1. Open Star Decorating Tip (I used #21, but you can use any other open star decorating tip) with green mashed potato. 2. Leave tip (I used #352 ) with yellow mashed potato.
  2. Pipe green mashed potato on meat loaf and add tomato sauce (or ketchup) in the center.

  3. Add round shaped carrot in center.
