Minion Tofu & Quinoa salad with Minion Cherry tomatoes

This is my lunch today! -Layer Tofu soboro and Quinoa salad.
Soboro is generary minced chicken cooked in shoyu, mirin, and sugar but I cooked vegetarian version of soboro with Tofu.
I drained firm tofu and place it in frying pan and saute them to remove excess water. Add mashed kabocha squash, rice syrup, pinch salt and cook about 5 minutes.
Add vegetable layer at bottom, Quinoa, and Tofu soboro on the top.
For Minion decoration, I used Nori, radish (or you can use soy cheese), and cucumber.

I also found Yellow Cherry tomatoes so made minion with it using Nori and cheese.
