Miso-Flavored Meat Sauce with vegetables over rice

I got this meat sauce idea from Zha Jiang Mian that my father-in-law cooks for my son.
Zha Jiang Mian is noodles topped with Minced pork with fermented soybean paste.

I used miso instead of using black bean paste  for more kids friendly taste and serve with brown rice instead of noodle for my son.

This food decoration idea is from Setsubun.

February 3 is  Setsubun (Bean-Throwing Festival) and Mamemaki (Bean-Throwing) is performed.
In this day, you throw beans at a member of the family wearing an Demon mask, the translation of Demon is Oni, hence the chant “Oni wa soto” or “Demon out”
I made Oni(Demon) face with Rice and meat sauce!

Here is the recipe.

Miso-Flavored Meat Sauce with vegetables over rice
 
Ingredients
  • 1 lb ground pork
  • ½ onion chopped into small pieces
  • 1 turnip peeled and cubed
  • 3 shiitake chopped into small pieces
  • 1 small carrot chopped into small pieces
  • 1 cerely chopped into small pieces
  • 3 chi gu (Arrowhead)* chopped into small pieces (option)
  • 3 cloves garlic, minced
  • 1 teaspoon ginger minced
  • 2 Tablespoon Sesame oil
  • salt, pepper

[sauce1]
  • 6 Tablespoon Miso
  • 1 Tablespoon Mirin
  • 5 Tablespoon sou sauce
  • 5 Tablespoon maple syrup
[Sauce2]
  • 2 Tablespoon corn starch
  • 3-4 Tablespoon water
[Decoration]
  • brown rice, Nori sheet, slice cheese (yellow and whice), green pea
Instructions
  1. Mix [sauce1] ingredients in a bowl
  2. Mix [sauce2] ingredients in a another small bowl
  3. Heat sesame oil in a frying pan then add garlic,ginger and onion
  4. Add minced vegetable and stir and then add ground pork and saute.
  5. Add mixed [sauce1] to a boil and then turn it down to low heat, cover and simmer for 15 minutes.
  6. stir [Sauce2] into the sauce gradually until it starts to thicken. You may not need all of it.
  7. Serve with any noodle or rice.

[Decoration]
  1. Place sauce and rice on the small bown and fliped to the plate.
  2. I used Nori sheet, slice cheese (yellow and whice), green pea for face decoration
