We had some casual potluck party in past weekend and I brought this Kid’s friendly healthy chicken meat ball with little Christmas decoration.

I usually add vegetable in the meatball such as carrot, spinach, onion that my son does not like to eat into meatball, but he loves to eat.

I also added Tofu to make meatball tender.

Here is meatball and decoration recipe.

 

Healthy Chicken teriyaki meatball for Christmas
 
Ingredients
  • 1 lb ground chicken
  • ½onion minced
  • 1 inch carrot grated
  • 2 shitake mushroom minced
  • 3 Tablespoon spinach blanced and minced
  • 1 Tablespoon brown sugar
  • 1 Tablespoon sesame oil
  • 1 Tablespoon miso
  • 1 egg
  • ¼ tofu drained and crushed
  • ½ cup panko
  • 1 cube garlic minced
  • ½ Tablespoon soy sauce
  • 3 Tablespoon milk
[Teriyaki sauce1]
  • 2 Tablespoon Sake (or rice one/ white wine)
  • 1 Tablespoon Brown rice cyrup (or sugar)
  • 3-4 Tablespoon soy sauce
  • 6-7 Tablespoon mirin
  • 2 tablespoons cornstarch
  • 2 tablespoons water
Instructions
  1. Preheat oven 380F
  2. Mix all ingredients knead to combine well
  3. Shape the mixture into small rounds shape (Tablespoon size).
  4. Place a baking sheet on a baking pan, bake them about 15-20 minutes until the meat is cooked through.
[Teriyaki sauce]
  1. Add 1 Tablespoon water into the sauce.
  2. Dissolve cornstarch in ¼ cup of cold water and add to sauce. Stir constantly to allow the sauce to thicken.

[Decoration]

Santa – I used Cherry tomato, mashed potato (or potato salad), black sesame for eyes, and kechup for cheeks.

Snowman- I also used mashed potato, nori sheet for button and eyes, kechup for cheeks, and carrot for hat. You can use any vegetable for decoration,
