My husband loves ramen (Japanese noodle dish) with tonkotsu (pork bone broth).
It taste good but it is so high in carbohydrates, sodium, high level of saturated fat and trans fat. Also it contains MSG, Mono sodium Glutamate.

So I cooked healthy, MSG free ramen broth from scratch for him. I added half pound of ground turkey but most of flavor of broth is from vegetables. This miso base broth has deep and rich flavor but lower calories.

This is very similar that I cooked vegen miso Ramen but I added more ingredients and little meat to make my husband happy since he loved to eat meat.

Secret ingredients of this broth is shio koji , miso, and Vegetable broth ingredients. You can use any vegetable you have in your fridge and cook your own delicious ramen broth.

Miso ramen with ground Turkey
  • Ramen noodle or any noodle (thin pasta noodle will be fine too)
  • 4 cloves garlic minced
  • 2 teaspoon ginger finely-chopped
  • 1 bunch scallion minced
  • ¼ onion minced
  • ¼ package of brown mushroom or 4 shiitake mushroom minced or finely-chopped
  • ½ (or 1) lb ground turkey
  • 2 pieces red pepper finely-chopped (option)
  • 2 tablespoon sesame oil

  • 2 sheets cabbage chopped
  • 3-4 sheets nappa (Chinese cabbage) chopped
  • 1 small carrot chopped
  • 1 whole corn corn chopped (Please keep cornstalk. this gives you good flavor on the broth)

[Vegetable broth]
  • 4-5 cup water
  • 2 dried shiitake mushroom
  • 1 strip kombu (kelp) seaweed
  • ½ cup Dried Daikon
  • 2 tablespoon Dried Vegetable Soup Mix

  • 6 tablespoon white sesame
  • 4-6 tablespoon miso (adjust with your taste)
  • 1 tablespoon shio koji (option)
  • salt, pepper (adjust with your taste)

  • *Tahini (sesame) paste
  • *Gochujang
  1. Soak all [Vegetable broth]ingredients (except Dried Vegetable Soup Mix) about 1-2 hour (over night) before you cook
  1. In the pot, put sesame oil and saute scallion, onion, ginger, garlic until wilted with low heat (about 3-4 min).
  2. Add Turkey ground meat, mushroom, red pepper and saute about 1-2 min with low heat.
  3. Add ingredients [B] and saute them 1 minute, and then add [Vegetable broth] you prepared, Dried Vegetable Soup Mix.
  4. After soup is boiled, add ingredients [soup] and adjust taste. Keep cook about 10-15 minutes to make soup more rich and creamy. Add Tahini and gochujang.
  5. Boil ramen noodle with separate pot, and drain water.
  6. Place noodle in your bowl and add 2 (soup). If you like add scallion on the top.
