Okra is season now (summer) and I was able to buy very fresh okra from farmers market in last week.

Okra is a rich source of dietary fiber and it contains contains vitamins A and C
Since this is so fresh, I decided to make miso pickles with them.

















Recipe is very simple and easy.

Okra miso pickles
  • 20 fresh okra
  • 4 Tablespoon Miso
  • 2 Tablespoon Maple Syrup
  • 1 teaspoon toasted sesame oil (option)
  1. Sprinkle salt wash okra and rub them. Rinse thoroughly, pat completely dry with towel.
  2. Mix together the miso, Maple syrup in a zipper bag and mix them. Add the okras and mix very well.
  3. Store in the refrigerator for at least a day or for up to 1 week. I suggest to eat after 3 days.
