I like to have ramen (soup noodle) in winter season. It makes you warm and ramen taste really good.What is ramen?

Ramen is a Japanese noodle dish that originated in China. Usually they cook with meat-based broth (such as pork, or chicken), and uses toppings such as sliced pork (chashu), dried seaweed (nori), green onions, etc…..
But this ramen is made by only veggie. My husband is impressed by this recipe, and he tought I used meat broth first…
Recipe is very simple too.

Vegan Miso Soup noodle - Ramen

Ingredients
  • 2 ramen noodle (or your favorite noodle)
  • 4 pieces shiitake mushroom (finely-chopped)
  • 2 pieces red pepper (finely-chopped)
  • 1 scallion (finely-chopped)
  • 2 tablespoon ginger (finely-chopped)
  • 1 garlic (finely-chopped)
  • 2 tablespoon sesame oil
  • 800 cc water
[A]
  • ½ package bean sprout
  • 2 piece(sheets) cabbage
  • ½ carrot
[B]
  • 4 tablespoon white sesame
  • 4-6 tablespoon miso (adjust with your taste)
  • salt, pepper (adjust with your taste)
  • 1 scallion (finely-chopped)
Instructions
  1. In the pot, put sesame oil and sauté scallion, ginger, garlic until wilted with low heat (about 3-4 min). Add shiitake mushroom, and red pepper and saute about 1-2 min with low heat.
  2. Add ingredients A and saute them30 sec, and then add water. After water is boiled, add ingredients B and adjust taste.
  3. Boil ramen noodle with separate pot, and drain water.
  4. Place noodle in your bowl and add 2 (soup). If you like add scallion on the top.
