I like to have ramen (soup noodle) in winter season. It makes you warm and ramen taste really good.What is ramen?
Ramen is a Japanese noodle dish that originated in China. Usually they cook with meat-based broth (such as pork, or chicken), and uses toppings such as sliced pork (chashu), dried seaweed (norisometimes called laver, Japanese name for edible seaweed sometimes called laversometimes called laver, Japanese name for edible seaweed , Japanese name for edible seaweed ), green onions, etc…..
But this ramen is made by only veggie. My husband is impressed by this recipe, and he tought I used meat broth first…
Recipe is very simple too.

Ingredients
2 ramen noodle (or your favorite noodle)
4 pieces shiitakean edible mushroom commonly use in Asian cuisines including Chinese, Japanese, Korean and Thai. It contains lot of vitamin, mineral, fiber with low calories. Also prevent cancer, obesity, high-blood pressure, diabetes. an edible mushroom commonly use in Asian cuisines including Chinese, Japanese, Korean and Thai. 2 pieces red pepper (finely-chopped)
1 scallion (finely-chopped)
2 tablespoon ginger (finely-chopped)
1 garlic (finely-chopped)
2 tablespoon sesame oilVegetable oil made from sesame seeds. You can find this oil in any Asian grocery super market.

800 cc water

½ package bean sprout
2 piece(sheets) cabbage
½ carrot

4 tablespoon white sesame
4-6 tablespoon misoMade by fermenting rice, barley and/or soybeans, with salt etc...The most typical miso made with soy. (adjust with your taste)
salt, pepper (adjust with your taste)
1 scallion (finely-chopped)
Instructions
In the pot, put sesame oilVegetable oil made from sesame seeds. You can find this oil in any Asian grocery super market.

and sauté scallion, ginger, garlic until wilted with low heat (about 3-4 min). Add shiitakean edible mushroom commonly use in Asian cuisines including Chinese, Japanese, Korean and Thai. It contains lot of vitamin, mineral, fiber with low calories. Also prevent cancer, obesity, high-blood pressure, diabetes. an edible mushroom commonly use in Asian cuisines including Chinese, Japanese, Korean and Thai. Add ingredients A and saute them30 sec, and then add water. After water is boiled, add ingredients B and adjust taste.
Boil ramen noodle with separate pot, and drain water.
Place noodle in your bowl and add 2 (soup). If you like add scallion on the top.
